A nineteenth century large & heavy antique French iron duck press. It has the cast words “A La Menagerie” which basically means “housewife” :). Duck presses were made for the preparation of a dish “Canard a la Presse” or pressed duck which was prepared at the table. It is a dish which originated in Rouen in the 19th century. It allows you to crush the duck carcass to extract the juice and the blood. As you turn the cast iron handle, the metal plunger moves down and crushes the carcass and the various cuts of meat. The blood then flows out via the blue enamel spout. The blood will then be used to combine the sauce with port, butter and lemon, prior to serving over thin slices of duck. It can also be used for pressing lobster or other types of meat
